Dark Chocolate Fudge Barbecue Sauce

Ingredients

  • 2 Garlic Cloves (minced)
  • 53g Brown Sugar
  • 170g Tomato Paste
  • 30g Dark Chocolate Fudge Sauce
  • 82g Soy Sauce
  • 1 tbsp Olive Oil
  • 2 tsp Smoked Paprika
  • 2 tsp Worcestershire Sauce
  • Rack of Pork Ribs

Method

  1. Warm olive oil in a saucepan
  2. Add the garlic and sauté for about 30 seconds
  3. Add the remaining ingredients and simmer until thickened, 15-20 minutes
  4. Chill for at least 3 hours or overnight
  5. Smother a rack of pork ribs
  6. Cover and refrigerate overnight
  7. Bake in pre-heated oven at Gas Mark 6/400 °F / 200 °C
  8. Remove foil and cook for another 25-30 minutes
  9. Check food is piping hot throughout, serve
